Chocolatería Cápsicum: El New Kid on the Block del Chocolate

La experiencia: 
En un localito cerca del Mercado de Medellín el joven chef Emilio Mejía busca usar ingredientes 100% naturales y mexicanos (especialmente chocolate del estado de Tabasco) para crear delicias chocolatosas.

Emilio fue muy amable para explicar todo sobre sus estudios en el prestigiado Instituto del Chocolate en México y su determinación para formar parte de la nueva ola en la tradición chocolatera de México. Le mostró a Gringo G todos los pasos desde enfriar la base de chocolate en una plataforma de mármol, a darle forma a los chocolates, a cubrir trufas y todo el proceso para hacer rellenos de ingredientes frescos que compra en el mercado cercano.

Gringo G espera que su ambición lo lleve a grandes creaciones, sus chocolates ya van por el camino correcto.

Platillos especiales: 
La trufa con mezcal es muy agradable y tiene una cantidad justa de alcohol para hacerte despertar en cada mordida. El chocolate blanco con maracuyá es algo que debes probar si tienes nostalgia por los sabores del trópico.

Tips: Cápsicum tiene una variedad de bebidas de chocolate frías y calientes, especialmente el tascalate (originario del estado de Chiapas), que es una de las favoritas de Gringo G.

Además si quieres tener una experiencia más profunda o tener una cita romántica diferente, sus chefs ofrecen catas de chocolate los viernes por la noche donde no falta la música. Llama para reservar.

In a small localito near the Mercado de Medellín young Chef Emilio Mejía is trying to use 100% natural Mexican ingredients (especially the chocolate, all from the state of Tabasco) to create delicious chocolate delights.

Emilio was kind enough to explain about all of his formal preparation at a renowned Chocolate Institute in Mexico and his determination to play a small part in reviving the Mexican chocolate tradition. He showed Gringo G all of the steps from cooling the hot chocolate base on a slab of marble, to molding the chocolates, to dipping truffles all the way through the processes of making fillings from fresh ingredients purchased at the nearby Mercado de Medellín.

Gringo G hopes his ambition leads to great things … his chocolates are already on their way!

The chocolate truffle with mezcal is very nice with an extra kick of mezcal in every morsel. The white chocolate with maracuya fruit is very nice if you like a tangy tropical flavor.

Tips: Cápsícum now has wonderful hot and cold chocolate beverages … particularly the “tascalate” (a drink of love) which is a particular favorite of Gringo G.

Chocolate Series: Valentine Month Part I of III: Tout Chocolat

The Experience: 
You might think from the Moulin Rouge type lights above the entrance that Tout Chocolat is a kind of burlesque in Paris, but once you step inside you soon notice that there is a lot of chocolate on sale a lot of very tantalizing chocolate.

The concept of Tout Chocolat is simple. Use the best possible chocolate, wherever that may be produced with no preference for any country or region's product, with seasonal fillings.  Speaking with Sous Chef Rodrigo Romo I was able to grasp that care and precision put into the making of every chocolate from mixing the basic ingredients to the pouring of the chocolates in the molds inside the cold room.

Also very key is the concept that the famed Chef Luis Robledo (winner of two Mexican National Chocolatier Awards) wants to make sure happens, the filling of the chocolates should never overwhelm the flavor of the chocolate covering itself but simply complement it.

Highly recommended if you want to give your loved one a wonderful little treat!

Tips: Tout is constantly changing their line of chocolates to fit seasonal trends but if many customers are insistent they will bring back popular hits out of season if the masses demand it!

La experiencia: Por las luces estilo Moulin Rouge sobre su entrada se podría pensar que Tout Chocolat es un cabaret de París, pero una vez adentro te das cuenta que hay mucho chocolate a la venta y muy tentador.



El concepto de Tout Chocolat es sencillo: Usar el mejor chocolate posible de cualquier lugar, sin preferencia sobre ningún país o región, con rellenos de temporada. Al conversar con el sous chef  Rodrigo Romo, Gringo G pudo constatar el cuidado y la precisión para realizar cada pieza de chocolate, desde la mezcla de los ingredientes base hasta el relleno de los moldes en una sala fría.

Otra de sus claves es la idea que el famoso chef Luis Robledo (ganador de dos premios World Chocolate Masters a nivel nacional) busca para sus chocolates: que el relleno nuca supere el sabor del chocolate sino que sea sólo un complemento

Todos los chocolates son exquisitos, pero uno especialmente bueno es el de mango con jengibre y a Gringo G le encantó saber que a finales de marzo Tout Chocolat lanzará una serie de chocolates de cerveza India Pale Ale con extracto de lúpulo real.
  
Tips: Tout suele cambiar sus chocolates para adaptarse a las tendencias de temporada, pero si muchos de sus clientes quieren que regrese alguno el voto popular cuenta.


Si compras una caja puedes tener una gran variedad de sabores. También puedes comprar tablilas de mezclas extra especiales de chocolate fino.
